Meal prepping hasn’t exactly been my strong suit…that was until now!! This kick ass👈 literally 😂 program has completely changed how I schedule my life and in doing so it has completely changed my life for the better. I used to roll out of bed..a hot mess…when the kiddos got up and try to wing it through my day. Let me tell you…that wasn’t working for me anymore. I was never getting ahead…the chores were always piling up, my workouts were rushed, my business was treading water and I just wanted so much more for my life. 👇 insert an 80 day program designed to get obsessed about and 💥BAM💥 it hit me….I was showing up to my life every day but I wasn’t showing up and fully setting my intentions and taking action to live my best life.
I started getting up earlier…much earlier…I started meal prepping differently…I started running my business like a boss and actually pushing beyond my comfort zone…I intentionally grew as a mother, partner, sister and coach…I can barely begin to describe what an awesome feeling it has been seeing the fruits of these changes be harvested.
Who knew getting up BEFORE everyone else to take care of me would have such a ripple effect…LOL…do NOT say I told you so…
6am isn’t exactly my favourite time of day 😣 so minimizing my list of things to think about that early makes a world of difference. Get up😪…eat🍳…digest😊…energize⚡…twerk it out 🏋️♀️. This precious mom time needed to be simple and quiet…a time to plan my day…set my intentions…start fresh.
This egg bake is super easy, and super versatile!! I made it in a square glass tray today but it can easily be made in muffin cups. I just loved the look of it all together. The bright colours make it so appealing!! 😍😍
To make it:
🍳 8 eggs
💦 2 tbsp water
🥕1/4 C carrots diced or shredded
🌶1/4 C diced bell pepper
🍃1/4 C chopped baby spinach
🥓 4 slices of turkey bacon chopped
1/2 tbsp olive oil
Preheat oven to 350°F.
Use oil to grease the tray or muffin tin.
Beat eggs together with water.
Add in the veggies and bacon and mix again.
Pour mixture into pan/tin and bake for 30-40 minutes. If using muffin tins this should take about 30 minutes. If using a square like I did it took 40 mins. Just watch for the eggs to set in the middle.
Serve immediately or keep in the fridge for up to 4 days. I’ve also made this and frozen it.
You can use any variation of veggies, proteins, or cheese that suits your taste!!
