Coconut Chia Seed Pudding

Good morning Weekend!!

I love having easy meals ready to go on Saturdays. It means extra snuggle time with two sweet sisters. This recipe is one of my go-tos. I love that you can switch up toppings to suit your mood, or whatever you have left in the fridge…

Try bananas with peanut butter!

Coconut Chia Seed Pudding

Ingredients:

30 m 6 servings 243 cals
1/2 cup chia seeds
2 cups coconut milk
6 tablespoons unsweetened coconut milk
1 tablespoon honey, or more to taste
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 pinch salt
1/2 cup fresh raspberries(optional)

Directions:

Prep: 10 m
Ready In: 30 m

1. Place chia seeds in a bowl.
2. Whisk coconut milk, unsweetened coconut milk, honey, vanilla extract, cinnamon, and salt together in a bowl; pour over chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 20 minutes, or cover bowl with plastic wrap and refrigerate overnight.
3. Stir pudding and top with raspberries.

Footnotes:
You can substitute stevia, honey, or sugar for the agave.
You can also substitute milk, soy milk, or almond milk for the coconut milk.
You can try any toppings you like However, this will change the flavor. bananas with peanut butter or pineapple with oranges! 🍍🍊

My personal favourite is rasberries with a handful of dark chocolate chips!!🍫
